Coffee Rubbed Lamb Steaks

Coffee-Rubbed Cowboy Lamb Steaks


6 TB instant espresso powder

2 TB Spanish paprika

1 TB Kosher Salt

2 tsp black pepper

¼ cup packed brown sugar

2 tsp garlic powder

2 tsp ground cumin



Prepare the rub and put it on the meat.  Place all the rub ingredients in a bowl and stir until well combined.  Sprinkle about ¼ cup of the spice blend onto your cutting board and put the steak on it, pressing down.  Lift the steak and press down on areas to which the rub has not yet adhered.  Turn the steak over and press it down to completely coat the other side.  When you are done, you should not be able to see any meat through the spices. Et aside and repeat with the remaining steak, adding more spice rub to the board as necessary.  Allow the steaks to rest for about 10 minutes before grilling.
